Our Wildfitness Scottish menu uses only the freshest local organic ingredients in season. Scotland's natural larder offers an extensive choice of flavoursome and fresh produce, including game from the high tops, organic meats from the lowlands, fish from the lochs and rivers and seafood from the coast.
The menu provided on the course follows our wild hunter-gatherer principles (see the Wild Eating page for details). We can also provide a personalized menu for vegetarians or those with specific allergies. See a sample menu below:
Breakfast: A variety of eggs, fresh fruit and cold wild meats
Lunch: Seared hand-dived scallops and yellow pepper vinaigrette . Avocado and chicory salad.
Dinner: Pan fried loin of Alladale venison on wilted greens, red currant and game jus. Steamed vegetables
Snacks: Fruit, nuts, raw vegetable nibbles with dips.
